Poměr celkových a čistých bílkovin ve vzorcích světlých sušenek

Ratio of total to true protein content in various kinds of fair biscuits
Abstract:
V této bakalářské práci byly studovány možnosti stanovení obsahu bílkovin. Studium bylo zaměřené na obsah veškerých a čistých bílkovin ve světlých sušenkách. Dále byla vypracována rešerše zabývající se bílkovinami. Stanovení bílkovin bylo provedeno Kjeldahlovou metodou a následně alkalimetrickou titrací.
Abstract:
This bachelorś thesis analyses possible ways of determining protein content. The analysis concentrates on the content of overall and pure proteins in ligthly-coloured biscuits. In addition, the thesisi contains a research focused on proteins. Protein content was determinated by means of the kjeldahl method and, consequently, by alkalimetric volumetric analysis.
