Salmonella and human alimentary tract

Abstract:

Nejčastějšími průjmovými onemocněními infekčního původu jsou v České republice salmonelóza a kampylobakterióza. V posledních letech došlo ke snížení počtu salmonelóz, přesto je nemoc stále řazena mezi problematické zoonózy. Rod Salmonella obsahuje přes 2000 sérotypů a je jedním z nejvýznamnějších patogenů čeledi Enterobacteriaceae. Jedná se o gramnegativní fakultativně anaerobní tyčky pohyblivé peritrichálními bičíky. Svým téměř všudypřítomným výskytem mohou buňky rodu Salmonella snadno kontaminovat potraviny živočišného i rostlinného původu. Ve svých lehčích formách mají salmonelózy charakter gastroenteritid, v těch těžších může dojít i k bakteriémii a úmrtí. Práce pojednává o zdrojích infekce, porovnává situaci v zemích Evropské unie a popisuje interakci buněk rodu Salmonella s lidským organizmem. Dále se zabývá diagnostickými metodami a možnými způsoby prevence. Zmíněny jsou také nejnovější poznatky ohledně salmonel jakožto potenciálních fytopatogenů.

Abstract:

Salmonellosis and campylobacteriosis are the most common sources of infectious diarrhoea in the Czech Republic. Even though the number of salmonellosis infections has decreased recently, it is still classified as a problematic zoonotic disease. Salmonella contains over 2000 serotypes and it belongs among the most significant pathogenic organisms of the family Enterobacteriaceae. It is a genus of Gram-negative facultative anaerobes of a rod shape. The cells are usually motile with peritrichous flagella. Considering their ubiquitous habitation, the cells are very likely to contaminate all kinds of foodstuff. Salmonellosis usually occurs in their milder form as gastroenteritis; however, the more serious cases may cause bacteriemia and death. This thesis focuses on the sources of infection, compare situation in the European Union countries and describes the interaction between Salmonella genus and human organism. Further, some diagnostic methods are mentioned as well as the possible concepts of precaution. Some recent findings about Salmonella as a phytopathogen are also mentioned.
