Changes in regional brewing on the example of municipal breweries in Moravian Ostrava and Fryštát and the noble brewery in Karviná in the 18th - 20th century

Abstract:

Bakalářská práce se zabývá historií pivovarnictví a následnými proměnami v tomto hospodářském odvětví na území Karvinska a Moravské Ostravy. Jedná se zejména o Měšťanský pivovar ve Fryštátě, dále pak Larisch-Mönnichův pivovar v Karviné a nedaleký Měšťanský pivovar v Moravské Ostravě. Zmíněné pivovary se nacházely v regionu, který se neustále rozvíjel a pomyslný vrchol nastal s rozvojem těžkého průmyslu a hojného přísunu obyvatel do těchto měst. V regionu se nacházely kamenouhelné doly, hutě a železárny, které se staly zdrojem obživy pro velké množství obyvatel. Složitá sociální situace a fyzicky náročná práce v průmyslových podnicích měla za následek zvýšení poptávky po pivu, na kterou musely pivovary patřičně reagovat. Pro pochopení a uchopení problematiky pivovarnictví jsem zakomponoval kapitoly o původu pivovarnictví, výrobní technologii a právních úskalích, která byla již od středověku pevně spjata s výrobou piva. V jednotlivých kapitolách jsem se rozhodl přehledně nastínit historii města a vývoj městských privilegií, která byla klíčová pro ekonomický rozkvět vybraných lokalit. Na konci práce se věnuji i Larisch-Mönnichově pivovaru v Karviné, který vnímám jako zdárný důkaz toho, že i pivovar, který byl v minulosti úzce spjat s vrchností, se dokázal transformovat v industriální podnik, který obstál na volném trhu a patřil k nejvyspělejším pivovarům v Rakouském Slezsku.

Abstract:

The bachelor thesis deals with the history of brewing and transformation in this economic sector in the Karviná and Moravian Ostrava regions. Thesis is mainly focused on the Burghers' brewery in Fryštát, the Larisch-Mönnich Brewery in Karviná and the nearby Burghers' brewery in Moravian Ostrava. These breweries were in a region that was constantly developing and the peak became with the development of heavy industry and abundant population to these cities. In the region there were coal mines and ironworks, which became a source of livelihood for many inhabitants. The difficult social situation and physically demanding work in industrial enterprises resulted in an increase in demand for beer, to which breweries had to respond appropriately. To understand and grasp the issue of brewing, I have incorporated chapters on the origin of brewing, production technology and urban privileges, which have been firmly connected with beer production since the Middle Ages. In the individual chapters, I decided to clearly outline the history of the city and the development of urban privileges, which were crucial for the economic boom of selected localities. At the end of the thesis, I also focus on the Larisch-Mönnich Brewery in Karviná, which I perceive as a successful proof that even the brewery, which in the past was closely connected with the nobility, managed to transform itself into an industrial enterprise that withstood the free market and belonged to the most advanced breweries in Austrian Silesia.
