Chemical changes in food fats
Abstract:
Bakalářská práce je literární rešerše na téma chemické změny v jedlých tucích. Pojednává o složení jedlých tuků a reakcích jejich nenasyceného uhlíkatého řetězce, které se běžně uplatňují při používání tuků v praxi. Práce se rovněž zabývá možnostmi stabilizace oxidovaných lipidů, jejich účinky na lidské zdraví a metodami stanovení vybraných komponent oxidovaných lipidů.
Abstract:
Bachelor's work is literature search on the topic of chemical change of the food fat. It discusses composition of food fat and reactions in their unsaturated carbonaceous chain which are commonly applied when fats are put in use. This work also deals with possibilities of stabilization of oxidated lipides, their effects on human health and methods to determine chosen component of oxidated lipides.
