Abstract:
Tato bakalářská práce se zabývá vlivem sušení na antioxidační vlastnosti slupek z bobulí révy vinné. V teoretické části je popsáno složení bobulí révy vinné, složení pokrutin z hlediska obsahu fenolických látek a jejich využití. This thesis examines the change of antioxidant properties of grape skin dried by hot air. The theoretical part describes the composition of grape berries, skin and their use. After that the effect of antioxidants on human health is described and various methods of grape skin treatment are specified.
