Modern trends in the production of chocolate
Abstract:
Tato bakalářská práce se zaměřuje na moderní trendy a způsoby zpracování v procesu výroby čokolády. V práci jsou popsány základní procesy a kroky při výrobě čokolády a možné moderní způsoby výroby nebo nové druhy čokolády a různé využití čokolády. Součástí práce je vliv surovin, výrobních procesů a skladování na kvalitu čokolády.
Abstract:
This bachelor thesis is focused on modern trends and methods of processing in the process of chocolate production. The work describes the basic processes and steps in the production of chocolate and modern methods of processsing in the chocolate production or new types of chocolate and different uses of chocolate.
