Enzymy jsou biologické katalyzátory hrající klíčovou roli při udržování homeostázy, vývoji a rozmnožování všech živých organismů. Katalyzují tak prakticky všechny chemické reakce i v těle člověka, a proto stanovení jejich aktivity představuje jeden z nejčastěji prováděných úkonů v biochemii a molekulární biologii.
