Czech Specials certification in Liberec restaurants

Abstract:

Bakalářská práce se týká oblasti gastronomie v cestovním ruchu a zkoumá význam certifikace Czech Specials pro provozovatele restaurací v Liberci, které nabízejí českou kuchyni. V první části práce jsou vymezeny pojmy týkající se především oblasti stravovacích služeb, gastronomie a certifikace v cestovním ruchu. V druhé, výzkumné, části jsou od provozovatelů necertifikovaných restaurací v Liberci, které mají potenciál certifikát Czech Specials získat, zjištěny potřebné informace týkající se jejich povědomí o této certifikaci či jejich zájmu o získání certifikace. Cílem práce je zjistit i to, jak tuto certifikační značku vnímají provozovatelé již certifikovaných restaurací. Bakalářská práce zkoumá také postoj provozovatelů vybraných libereckých restaurací vůči certifikaci stravovacích zařízení obecně. Podle diplomové práce Daniela Muhra z roku 2020 nahlíží certifikované restaurace na certifikaci stravovacích zařízení spíše pozitivně a necertifikované spíše negativně. Dle vlastního provedeného výzkumu ale toto tvrzení pro liberecké restaurace neplatí.

Abstract:

The bachelor thesis concerns the area of gastronomy in tourism and examines the importance of the Czech Specials certification for restaurant operators in Liberec who offer Czech cuisine. The first part of the thesis defines the concepts related mainly to the field of catering services, gastronomy and certification in tourism. In the second part, the research part, various information is collected from operators of non-certified restaurants in Liberec that have the potential to obtain the Czech Specials certificate. For example, what awareness do operators have of this certification or whether they are interested in obtaining it. The aim of the work is also to find out how the operators of already certified restaurants perceive this certification mark. The bachelor thesis also examines the attitude of operators of selected restaurants in Liberec towards the certification of catering establishments in general. The conclusion of Daniel Muhr's master thesis from 2020 shows that certified restaurants have a rather positive view of the certification of catering facilities, while non-certified restaurants have a rather negative view of it. However, according to the research conducted, this statement does not apply to Liberec restaurants.
