Comparison of innovative gastronomic concepts in the Czech republic and Slovakia

Abstract:

The aim of this diploma thesis is to compare and evaluate innovative gastronomic concepts in the Czech Republic and Slovakia. We will focus on the final consumer. We will evaluate the uniqueness of the concept, product diversification, characteristics of each concept, quality, price level and customer preferences within the decision-making process when choosing a concept. The work is divided into three parts. In the first, theoretical and methodological, we get acquainted with the basic concepts associated with the text of the work. It is mainly about acquainting the reader with the basics of gastronomic theory. In the analytical part, we will compare selected catering facilities as representatives of individual concepts that we will analyze. We will also conduct a market research with the help of a questionnaire survey, which will focus on the customer's decision-making process, his preferences and consumer behavior. In the design part of the work we will focus on the discovered shortcomings and then prepare a proposal for solutions to eliminate them.

Abstract:

Cieľom tejto diplomovej práce je porovnanie a vyhodnotenie inovatívnych gastronomických konceptov v ČR a na Slovensku. Zameriame sa pri tom na konečného spotrebiteľa. Budeme hodnotiť jedinečnosť konceptu, diverzifikáciu produktu, charakteristiku každého konceptu, kvalitu, cenovú hladinu a preferencie zákazníka v rámci rozhodovacieho procesu pri výbere konceptu. Práca je rozdelená do troch častí. V prvej, teoreticko-metodologickej sa oboznámime so základnými pojmami spojenými s textom práce. Jedná sa predovšetkým o zoznámenie čitateľa so základmi gastronomickej teórie. V analytickej časti porovnáme vybrané stravovacie zariadenia, ako zástupcov jednotlivých konceptov, ktoré budeme analyzovať. Vykonáme zároveň aj prieskum trhu za pomoci dotazníkového šetrenia, ktorý bude zameraný na rozhodovací proces zákazníka, jeho preferencie a spotrebiteľské správanie. V návrhovej časti práce sa zameriame na objavené nedostatky a následne pripravíme návrh riešení k ich odstráneniu.
