Abstract:

Na problém pohostinství lze nahlížet z několika úhlů, záleží na tom, které jeho funkci a rysu dáme přednost. Hlavním těžištěm práce je snaha zachytit změnu jednotlivých majitelů a pachtýřů. Skutečnost, že to bylo velmi častým jevem dokazují příklady podniků, k nimž jsem měl možnost dohledat potřebné historické prameny. Sledování těchto změn posloužilo i k určení průměrné doby setrvání vlastníků či provozovatelů na jednom místě. Ač se nejednalo o nijak dlouhé období, dokázala si řada z nich získat přízeň svých zákazníků, která byla pro jejich existenci nezbytná. S tím plně souvisí i velké množství kulturních akcí, které většina z nich pořádala. Tím pomáhali utvářet kulturní scénu a velmi tak obohacovali život ve svých městech. Díky této skutečnosti, nelze plně vykreslit dobovou atmosféru, aniž bychom do ní nezahrnuli právě tyto podniky. Pohostinské podniky ale neměly samozřejmě jen pozitivní vliv na své okolí. Často to byla místa páchání kriminální činnosti. Neméně zajímavou stránku představuje symbióza vojska s pohostinskými zařízeními. Neboť některé podniky vděčí za svou existenci především žíznivosti příslušníků c. k. armády, která se neustále zvyšovala. A nutno i dodat, že řada z nich by bez jejich přítomnosti ani nevznikla.

Abstract:

The issues of the hospitality industry can be viewed from several angles, it depends which of its functions and features we prefer. The work is focused on changes of individual owners and tenants. The changes were usual phenomenon as it is demonstrated by the examples of pubs and hotels which I found in historical source documents. Tracing those changes helped to state an average time in which the owners or tenants stayed at one place. Though they did not stay at one place for a long time, a lot of them gained a reputation which was essential for their existence. That was the reason why most of them organized a large number of cultural activities and by means of such activities they helped to create local culture and enrich the life in the towns. This is the reason why we cannot describe an atmosphere of that period without mentioning pubs and hotels. Of course, they did not have only a positive influence on their surrounding. They often used to be places of criminal acts. A symbiosis between the army and the pubs and hotels is also an interesting issue. Had it not been for soldiers? continuously increasing thirst, some pubs and hotels could not have existed. Moreover, a lot of them would not have come to life without their presence.
