Abstract:
This thesis focuses on the development of rheological and baking properties. Two types of storage are tested - in paper and in plastic airtight packaging, for one month, with a frequency of three days. The methods used in the practical part include moisture determination, Mixolab measurement, wet gluten status and gluten index, and Falling number.
