The Role of Culinary Festivals in the Heritage of Czech Gastronomy

Abstract:

Tato bakalářská práce je zaměřena na kulinářské festivaly a jejich roli v dědictví české gastronomie. V teoreticko-metodologické části se nacházejí základní definice, členění a poznatky související s danou problematikou. Cílem této práce bylo zjistit dnešní význam a přitažlivost tradičních kulinářských událostí z pohledu jejich účastníků, dále pak preference a důvody, které návštěvníky přivádějí. V práci byly položeny dvě výzkumné otázky: „Liší se důvody navštívení gastronomického eventu akci od akce?“ a „Existuje určitá závislost návštěvnosti gastronomických událostí na pohlaví, věku a původu účastníků?“. Terénní průzkum byl učiněn na dvou gastronomických událostech, konkrétně se jednalo o Svatomartinský Mikulov a Slavnosti moravského uzeného a vína na hradě Veveří. Dotazovaní účastníci navštívených gastronomických eventů odpovídali na několik typů otázek týkajících se kulinářských festivalů obecně a otázek pro konkrétní navštívené události. Průzkum této bakalářské práce je součástí projektu Ministerstva kultury ČR s číslem DG18P02OVV067 a s názvem “Kulinární dědictví českých zemí: paměť, prezentace a edukace”, ve kterém je zapojena i Vysoká škola hotelová v Praze 8.

Abstract:

This bachelor thesis is focused on culinary festivals and their role in the heritage of Czech gastronomy. The theoretical and methodological part contains basic definitions, classification and knowledge related to the issue. The aim of this work was to find out the current significance and attractiveness of traditional culinary events from the point of view of their participants, as well as the preferences and reasons that bring visitors. Two research questions were asked: "Are the reasons for attending a gastronomic event different from the event?" And "Is there a certain dependence of attending gastronomic events on the gender, age and origin of the participants?". Field research was carried out at two gastronomic events, namely St. Martin's Mikulov and the Moravian Smoked Meat and Wine Festival at Veveří Castle. The interviewed participants of the visited gastronomic events answered several types of questions concerning culinary festivals in general and questions for specific visited events. The research of this bachelor's thesis is part of the project of the Ministry of Culture of the Czech Republic with the number DG18P02OVV067 and entitled "Culinary heritage of the Czech lands: memory, presentation and education", in which the Institute of Hospitality in Prague is involved.
