Food labelling as an instrument of nutrition literacy

Abstract:

Práce sleduje znalosti a postoje studentů ohledně označování potravin. Označování potravin může sloužit jako edukační nástroj, který může být nápomocen při výběru správných potravin, a tím ovlivnit zdraví spotřebitele. Součástí práce je pilotní průzkum mezi studenty Lékařské fakulty Masarykovy univerzity týkající se označování potravin. Hlavní část práce je zaměřena na edukaci studentů středních škol pomocí intervenčního projektu zaměřeného na označování potravin. Intervenční projekt je proveden pomocí dotazníkového šetření a jsou zjišťovány znalosti a postoje týkající se označování potravin u studentů středních škol v Brně a Uherském Hradišti. Pro ověření stanovených hypotéz je srovnáván stav znalostí, postojů a chování studentů před a po intervenci u intervenované skupiny a rovněž u kontrolního souboru. Závěr práce shrnuje postoje a znalosti studentů Lékařské fakulty Masarykovy univerzity o označování potravin a vyhodnocuje vliv intervenčního projektu na znalosti a postoje studentů různých typů středních škol.

Abstract:

This thesis explores the knowledge and attitudes related to food labelling among the students. Food labelling can serve as a tool for the education of consumers. It can contribute to their health by helping them to choose the right foods. This work contains a pilot investigation on food labelling conducted among students at the Faculty of Medicine at Masaryk University. The main part of the thesis focuses on teaching secondary school students about food labelling via an intervention programme. The intervention programme involves the teaching of secondary school students in Brno and Uherské Hradiště about food labelling. Their resultant knowledge and attitudes are subsequently evaluated via a questionnaire. The knowledge and attitudes of the students and a control group are analysed before and after the intervention programme in order to establish its efficiency. The conclusion of the thesis summarizes the knowledge and attitudes related to food labelling among the students of Faculty of Medicine Masaryk University, and the efficiency of the intervention programme among the various secondary school students is analysed.
