Estrogenic effect of soybean and it’s impact on human organism

Abstract:

V posledních letech se stalo často diskutovaným tématem zdravé stravování a jeho dopad na zdraví. V souvislosti s tím se částečně v zemích Evropy změnil způsob stravování, struktura i jeho základní složky. Některé potraviny se začaly vynechávat, jiné se dostaly do popředí. Díky tomu se začala více konzumovat i sója luštinatá. Tato bakalářská práce, na téma Estrogenní účinky sóji a její dopad na lidský organismus, pojednává o sóje jako rostlině, jejím složení, nutriční hodnotě, vlivu jednotlivých složek na zdraví konzumenta i různých výrobcích ze sóji a jejich konkrétním benefičním účinkům na zdraví. Kromě výhod konzumace sóji se však zabývá i negativními vlivy na zdraví a výživovou hodnotu, vycházejících z obsahu antinutričních látek a jejími alergenními účinky. Hlavní roli v této práci hrají i fyziologicky účinné látky, především fytoestrogeny, které sója obsahuje. O těchto látkách se hodně mluví v souvislosti s estrogenními účinky, ale také účinky antikarcinogenními.

Abstract:

Over the past few years, healthy eating and its impact on health has become one of the most discussed topics. In connection to this, in Europe, there was partly a change in eating habits, structure, and constituents of nourishment. Some food types were phased out, yet some became more popular. Thanks to this, even soybean consumption increased. This bachelor´s thesis, on topic Estrogenic effect of soybean and it’s impact on human organism, discusses soybean as a plant, its nutrition value, the impact of individual constituents on the health of the consumers as well as different products made from soybean and its beneficial impacts on health. Besides the advantages of soy consumption, this thesis discusses the negative effects of soy on health and nutritional value, outgoing from the content of antinutritional substances and its allergenic effects. The main part of this thesis examines physiologically active substances, especially phytoestrogens, that can be found in soybean. These substances are likely to be mentioned in connection to its estrogenic and also anticarcinogenic effects.
