Obsahem diplomové práce je analýza aromatických látek a organických kyselin ve vybraných ovocných destilátech a jejich senzorické hodnocení. V teoretické části je popsána základní charakteristika ovoce, jeho chemické složení, rozebrán technologický postup výroby kvasu, alkoholové kvašení a základní vady, které se v kvasech mohou vyskytovat. The thesis analyses aromatic substances and organic acids in selected fruit spirits and their sensory evaluation. The theoretical part describes basic characteristics of fruit, its chemical composition, technological process of fermentation, alcoholic fermentation, and basic defects, which can occur in ferment.
