Diplomová práce popisuje vliv sterilačního zákroku na vybrané analytické ukazatele tepelně sterilovaných ovocných výrobků. Teoretická část se zabývá popisem rozdělení ovoce, jejím chemickým složením, charakteristikou vybraných konzervárenských surovin, technologii výroby tepelně sterilovaných ovocných výrobků a popisem analytických metod pro kontrolu těchto výrobků. This thesis describes the effect of sterilizing treatment for selected analytical indicators of heat-sterilized fruit products.
