The changes of chemical composition in potato tubers during storage

Abstract:

Tato práce je zaměřena na změny chemického složení brambor v průběhu skladová-ní. V první části se pojednává o chemických, anatomických a morfologických vlastnostech bramborových hlíz. V další části jsou popsány jednotlivé odrůdy nejčastěji pěstované v ČR. Protože tato práce je zaměřena na skladování brambor, jsou zde zahrnuty i podmínky a způsoby skladování bramborových hlíz, včetně změn, ke kterým dochází v průběhu skladování. V praktické části se zabývám pokusem, jejímž cílem bylo sledování vlivu podmínek sklado-vání na obsah sušiny v bramborové hlíze. Pro pokus byly vybrány následující odrůdy: velmi raná Komtesa, poloraná Red Anna, poloraná Lolita a raná Kornelie, které byly skladovány v různých prostředích. Výsledky měření byly statisticky zpracovány. Na základě měření je možno konstatovat, že ve většině případů docházelo ke zvýšení obsahu sušiny.

Abstract:

The work is focused on the changes of the chemical composition of potatoes during storing. The first part deals with the chemical, anatomical, and morphological properties of potato tubers. The next part describes individual cultivars grown in the Czech Republic most often. As the work is focused on the storage of potatoes it includes description of conditions and methods of storing potato tubers including the changes the tubers undergo during the storage. In the practical part, I covered an experiment the aim of which was to monitor the influence of condition of storage on the content of dry basis in the tuber. The following cultivars were chosen for the experiment: very early Komtesa, mid-early Red An-na, mid-early Lolita, and early Kornelie, which were stored under various conditions. The results of the measurements were statistically processed. On the basis of the measurements it is possible to state that the contens of the dry basis increased in most cases.
