The Catering Facilities in a Large Shopping Center

Abstract:

Tato diplomová práce je zaměřena na charakteristiku stravovacích středisek, se kterými je možné se setkat v nákupním centru Chodov. Cílem této diplomové práce je, na základě zjištěných informací a vlastních zkušeností, navrhnout pro stravovací střediska možná zlepšení pro větší zaujetí zákazníků. Charakterizovat stravovací střediska nákupního centra Chodov a pomocí provedeného průzkumu, zjistit preference při výběru stravovacích středisek a tyto zjištěné výsledky porovnat s výsledky celosvětového průzkumu společnosti CBRE - Food&Beverage 2015. Teoretická část je zaměřena na historický vývoj nákupních center v USA, v Evropě a v České republice. Dále je v této kapitole zmíněna historie pohostinství, formy společného stravování a definice základních teoretických pojmů použitých v mé diplomové práci. V druhé části práce nejdříve popisuji provozovatele nákupního centra Chodov, skupinu Unibail-Rodamco, a samotné nákupní centrum Chodov. Poté charakterizuji všechna stravovací střediska nákupního centra Chodov, a vzájemně je porovnávám ve třech kategoriích – restaurace, fast foody, kavárny a cukrárny, podle cen pokrmů a nápojů. V druhé části také analyzuji průzkum provedený jak osobně mezi návštěvníky nákupního centra Chodov, tak přes internetový server vyplnto.cz, kterým jsem zjišťovala preference výběru stravovacích středisek. V závěru této části vyhodnocuji výsledky průzkumu. V třetí - návrhové části uvádím náměty na zlepšení a zvýšení návštěvnosti stravovacích středisek v nákupních centrech.

Abstract:

This degree thesis focuses on the characteristics of food-service and catering facilities that can be visited in the Chodov Shopping Center. Grounded on the data collected and experience gained, the aim of this thesis is to suggest possible improvements to enhance the attractiveness for customers while providing characteristics of food and beverage options in the Chodov Shopping Center and, with the help of data from a survey, identify preferences in choosing a catering facility and compare the survey responses with the results of the world-wide Food&Beverage 2015 survey carried out by CBRE. The theoretical part is focused on the history of shopping centers in the USA, Europe and the Czech Republic. Additionally, the history of food service, types of public catering establishments and definitions of basic theoretical terms used in my degree thesis are dealt with in this chapter. The second part of the thesis starts with an introduction of Unibail-Rodamco, operator of the Chodov Shopping Center, and description of the Chodov Shopping Center. All food-service and catering facilities are then characterized and compared within their three respective categories – restaurants, fast-food facilities, cafés and patisseries – according to the prices of food and beverages. Here, in the second part of my degree thesis, I analyze the survey that was conducted both in person among the visitors of the Chodov Shopping Center and via an internet server vyplnto.cz to identify preferences in choosing from food and beverage offerings. The results of the survey are assessed at the end of this part. The third, suggestion-making part gives suggestions and ideas for improvements to attract more customers to food-service and catering facilities in shopping centers.
