History, Survey and Analysis of Restaurants Specializing in Mexican Cuisine in Pilsen Region

Abstract:

Moje bakalářská práce mapuje nabídku restaurací, nabízejících mexickou kuchyni v Plzeňském kraji, a zájem o ně. Vycházím především ze situace pěti mexických restaurací - dvou v Plzni a po jedné v Klatovech, Domažlicích a Mlázovech. Cílem práce je zjistit, zda lze předpokládat, že vzhledem ke stávajícímu malému počtu restaurací nabízejících mexickou kuchyni v Plzeňském kraji by na trhu mohlo obstát více podobných podniků. Nejdříve bych chtěla přiblížit základy mexické kuchyně, historii, suroviny a propojení s etnikem a kulturou. Prakticky jsem dané téma řešila návštěvami restaurací a rozhovory s provozovateli. Tím jsem analyzovala, jak se podnikům daří, jaké používají suroviny a metody a jak jsou dle jejich názoru konkurenceschopní. Poté jsem anketou mezi návštěvníky běžných restaurací zjišťovala, zda znají mexickou kuchyni a zda jsou mexické restaurace a pokrmy mezi respondenty oblíbené či nikoli, případně zda by uvítali větší množství podobných podniků. Těmito metodami bylo zjištěno, že restaurace zabývající se pouze mexickou kuchyní se velké oblibě netěší, ale je třeba je spojit s dalšími typy kuchyní a atraktivitami. Více mexických restaurací by se na trhu neudrželo. Mexická kuchyně je mezi návštěvníky považována spíše za občasné zpestření, než za často vyhledávaný cíl.

Abstract:

My bachelor’s thesis deals with the position of five Mexican restaurants in the Pilsen Region – namely in Pilsen (2 restaurants), in Klatovy (1), in Domažlice (1) and Mlázovy (1). The aim is to find out if it is possible, in view of current low number of restaurants offering Mexican cuisine in the Pilsen Region, to have more restaurants like this. First I am introducing the basic elements of Mexican cuisine, its main ingredients and dishes, and I am also mentioning its interconnection with Mexican culture. To gather needed material for my work I visited restaurants and interviewed their managers. After evaluating information gained in the restaurants I could analyze, how well they do their business, what ingredients and methods they use and how high – in their opinion - is their competitive ability. Then I carried out a survey among visitors of common restaurants (not specialized in any particular cuisine) with the following questions: if they know Mexican cuisine, if they like / dislike Mexican restaurants and their cuisine, or possibly if they would appreciate to have more restaurants like this. By using these questionnaire methods I have found out that restaurants offering only Mexican cuisine do not belong among favourite ones. The solution might be in connection with other types of cuisine which would make the restaurant more attractive. More Mexican restaurants would not survive in the current market. Mexican cuisine is not taken as often popular aim it is chosen mainly for the sake of variety.
