Cílem bakalářské práce bylo určit a popsat vybrané méně známé druhy bylinek a je-jich využití v gastronomii příp. v dalších odvětvích. Bakalářská práce se zabývá historií bylinkářství, jsou zde uvedené vonné a chuťové látky běžně obsažené v bylinách. Z che-mického hlediska jsou zde rozebrány důležité obsahové látky v bylinách a jejich účinky. Těmito skupinami látek jsou silice, alkaloidy, fenoly, vitaminy …more

The aim of the bachelor thesis was to determine and describe selected lesser known types of herbs and their use in gastronomy or in other sectors. Bachelor thesis deals with the history of herbalism, describes fragrances and flavor substances commonly found in herbs.
