Modern analytical methods for determination allergens in food

Abstract:

Tato bakalářská práce se zabývá potravinovými alergeny. Mezi nejvýznamnější alergeny patří potraviny obsahující lepek, korýši, vejce, ryby, jádra podzemnice olejné, sója, mléko, skořápkové plody, celer, hořčice, sezamová semena, oxid siřičitý a siřičitany, vlčí bob a měkkýši. V první částí je uvedena charakteristika potravinové alergie, příznaky alergické reakce a legislativa České republiky, která se týká potravinových alergenů a jejich pravidel označování na obalech potravin. U každé skupiny alergenů je vyjmenován hlavní alergen či alergeny, většinou bílkovinné povahy. Druhá část je věnována instrumentálním a dalším metodám stanovení výskytu prvních sedmi skupin alergenů v potravinách.

Abstract:

Food allergens are the topic of this bachelor thesis. Foodstuffs containing a wheat, a crustacean shellfish, an egg, a fish, a peanut kernel, a soy, a milk, tree nuts, a celery, a mustard, a sesame seeds, a sulphur dioxide and sulphites, a lupin, and a mollusk shellfish are the most important allergens. The characteristics of food allergies, their symptoms and the Czech legislation about food allergens are described in the first part of the thesis. The main allergen(s) are listed at each allergen group, predominantly containing protein. The instrumental and other analytical methods for determinations of allergens in foodstuffs are summarized and characterized in the second part of this bachelor thesis.
