Chromatographic and Enzymatic Determination of Glucose and Fructose in Red and White Wines
Abstract:
V teoretické části diplomové práce je charakterizována réva vinná a vybrané odrůdy červených a bílých vín, popis chemického složení vína včetně jednotlivých technologických kroků jeho výroby a metodami stanovení sacharidů ve víně. Experimentální část je zaměřena na stanovení glukózy a fruktózy v 15 vybraných vzorcích červených a bílých vín pomocí HPLC s RID detekcí a enzymatickým stanovením.
Abstract:
In the theoretical part of the thesis the grapevine and selected varieties of red and white wines are characterized. The description of the chemical composition of wine including production processes and methods of carbohydrates determination in wine is done.
