Current Knowledge about Entomophagy in Gastronomy

Abstract:

Práce poskytuje pohled na entomofágii, tedy využití hmyzu jako součásti lidské stravy ve světě i u nás. Sumarizuje výživové hodnoty a pozitivní přínosy v tomto ohledu pro neustále se rozšiřující populaci naší planety. Konzumaci hmyzu předkládá jako vhodnou alternativu řešení potravinových krizí, civilizačních chorob - podvýživa a obezita, či možnost jejího využití jako potravinového doplňku. Seznamuje s jedlými druhy ze zástupců řádu Insecta ve světové entomofágii a s poznatky o rozvíjejícím se zájmu o tuto oblast v poněkud střídmějších částech naší planety, kde se v současnosti ještě stále bojuje se zbytečnými předsudky.

Abstract:

The thesis pursues Entomophagy, a usage of insect as a part of human diet in Czech Republic and worldwide. It summarises nutritional values and positive assets of this subject for permanently growing population of our planet. The thesis presents the consumption of insect as a proper alternative for solving the problems of food crises and civilization diseases ? the malnutrition and obesity, as well as a possibility to use it as a diet complement. The thesis also informs about edible species of Insecta order in the worldwide Entomophagy. It also acquaints with the observation of growing interest in the consumption of insect in slightly abstemious parts of our planet where there are still some groundless prejudices against this subject at present.
