Influence of flotation on the quality of the resulting wine

Abstract:

Diplomová práce byla vypracována v letech 2020 a 2021 na Ústavu vinohradnictví a vinařství Zahradnické fakulty Mendelovy univerzity v Brně. Práce podává přehled možných způsobů odkalení moštu, které mohou být uplatněny v rámci předfermentačních postupů. Ukazuje důležitost a vliv odkalení moštu nejen na průběh fermentace, ale také dopad odkalení na výsledné víno. Práce se také zabýva rolí kyslíku v průběhu odkalování v kontextu využití flotace. V experimentální části práce byla vyrobena vína na základě dvou způsobů odkalení a to statické sedimentace a flotace s využitím vzduchu a želatiny a s vlivem ošetření moštu oxidem siřičitým a kyselinou askorbovou. V rámci porovnání dopadů dvou různých způsobů odkalení je pozornost zaměřena na sledování jejich vlivu na kinetiku fermentace a dopadu na množství fenolikých látek.

Abstract:

The diploma thesis was elaborated in the years 2020 and 2021 at the Department of Viticulture and Enology of the Faculty of Horticulture of Mendel University in Brno. The theses provides an overview of possible ways of must clarification, which can be applied in pre-fermentation procedures. It shows the importance and influence of the clarification of the must not only on the course of fermentation, but also the impact of the clarification on the resulting wine. The work also deals with the role of oxygen during clarification in the context of the use of flotation. In the experimental part of the work, wines were produced on the basis of two methods of clarification, namely static sedimentation and flotation using air and gelatin and with the influence of treatment of must with sulfur dioxide and ascorbic acid. As part of the comparison of the effects of two different methods of clarification, attention is focused on monitoring their influence on the kinetics of fermentation and the impact on the amount of phenolic substances.
