Polyphenols and antioxidants in sweet potato (Ipomoea batatas)

Abstract:

Cílem této bakalářské práce bylo zjistit vliv tepelné úpravy na antioxidační aktivitu a obsah polyfenolů v hlízách povijnice batátové (Ipomoea batatas). Dále byla porovnána nutriční hodnota batátů s plodinou lilek brambor (Solanum tuberosum) na základě literární rešerše. Pro analýzu byly použity odrůdy Beauregard, Dubajská, Višnjica bílá a Višnjica Fialová. Antioxidační aktivita (AOA) byla měřena spektrofotometrickou metodou DPPH (2,2-difenyl-1-pikrylhydrazyl). Celkový obsah polyfenolů (TPC) byl stanoven spektrofotometrickou metodou využívající Folin-Ciocalteuovo činidlo. Batáty se lišily svou tepelnou úpravou a analyzovaly se vařené (t=100 °C, 10 min) a pečené (t=180 °C, 30 min). Získané hodnoty byly porovnány s hodnotami syrových vzorků. Výsledky práce potvrzují výrazný vliv tepelné úpravy na obsah látek ve smyslu jejich zvýšení, přičemž během vaření byly zachovány nejvyšší hodnoty AOA a TPC. Na obsah antioxidantů a polyfenolů byla nejbohatší fialová odrůda Višnjica fialová, naopak nejnižší hodnoty byly naměřeny u kultivaru s bílou dužinou Višnjica bílá. Chemické složení batátů oproti lilku brambor se liší především v obsahu vitaminu A, beta-karotenů a antokyanů, které lilek brambor neobsahuje. Tyto látky mají za následek vysokou antioxidační aktivitu, a proto mají příznivé účinky na náš organismus.

Abstract:

The aim of this bachelor thesis was to determine the effect of heat treatment on antioxidant activity and polyphenol content in the tubers of sweet potato (Ipomoea batatas). The nutritional value of sweet potato was also compare with potato (Solanum tuberosum) based on literary research. For the analysis were used varieties Beauregard, Dubaian, Višnjica purple, Višnjica white. Antioxidant activity (AOA) was measured by the spectrophotometric method DPPH (2,2 - diphenyl - 1 - picrylhydrazyl). The total polyphenol content (TPC) was determined by a spectrophotometric method using the Folin-Ciocalteu reagent. Sweet potatoes differed in their heat treatment and were analyzed cooked (t = 100 °C, 10 min) and baked (t = 180 °C, 30 min). The obtained values were compared with the values of raw samples. The obtained results showed a significant impact of heat treatment on the quality of sweet potatoes in terms of their increase. The highest values of AOA and TPC were maintained by cooking treatment. The highest antioxidant activity and the total content of polyphenols was found in the variety Višnjica purple. On the contrary, the lowest content of these substances was in the cultivar Višnjica white. The chemical composition of sweet potatoes compared to potatoes differs mainly in the content of vitamins A, beta-carotenes and anthocyanins, which potatoes do not contain. These substances result in high antioxidant activity and therefore have beneficial effect on our body.
