Tato diplomová práce se zabývá vlivem fosforitanů na obsah polyfenolických látek ve vybraných zemědělských plodinách. Teoretická část se zabývá klasifikací a stručnou charakteristikou polyfenolických látek, jejich biosyntézou a pozitivními vlivy na lidské zdraví.
