Diplomová práce se zabývá vlivem odrůdové skladby a tepelné úpravy na obsah celkových polyfenolů a antioxidační aktivity ve vybraných odrůdách kdoulí. Teoretická část obsahuje stručnou charakteristiku zkoumaných odrůd, jejich chemické a morfologické znaky, podmínky a význam pěstování. This thesis deals with the influence of varietal and heat treatment on the total polyphenol content and antioxidant activity in selected varieties of quince. The theoretical part contains a brief description of the varieties studied, their chemical and morphological characters, and the importance of growing conditions.
