Abstract:
Diplomová práce se zabývá srovnáním obsahů biogenních aminů u bílých vín ze Slovácké vinařské podoblasti. V teoretické části byla popsána technologie výroby bílých vín, v druhé kapitole byly popsány mikroorganismy produkující biogenní aminy ve víně a obsahy biogenních aminů vyskytující se ve víně. The thesis deals with comparing the content of biogenic amines, for white wines from the wine region of Slovácko. The theoretical part describes the technology of white wines, in the second chapter were described microorganisms producing biogenic amines in wine and contents of biogenic amines occurring in wine.
