Abstract:

Válkyová, Natálie. The Influence of Globalization on the Gastronomy and its Establishments in the Region of Prague, (Bachelor dissertation). The Institute of Hospitality Management in Prague. Prague, April 2017, 70 pages. The aim of this dissertation is to research the influence of globalization on the gastronomy in Prague. The main focus will be on the current culinary environment in Prague compared to the past to see how globalization has changed it. The further focus is on how it globalization affects the world’s food environment and how it is projected in Prague. The research is done through a questionnaire and thus from the populations point of view, as they are the ones living in the current state of gastronomy. The results point towards the gastronomy and the population being affected in some areas more than others thus showing that globalization has both affect on the local gastronomy as well as it has effected and shifter the population’s preference when it comes to local gastronomy, thus answering the research questions: • How has globalization changed the gastronomical offer and the establishments in Prague? • Has globalization helped with securing Czech cuisine as a preference of Prague’s population or has it encouraged a shift towards more international cuisines?
