Cultivars and technological processes of cider and perry production.

Abstract:

Tato bakalářská práce se zabývá odrůdami jabloní a hrušní vhodnými pro výrobu cidrů a perry, stručně je popsán též postup výroby. Od historie samotných ovocných dřevin, přes správné ošetřování sadů a některé obsahové složky, až po popis samotných odrůd. Všechny odrůdy, které jsou popsány v této práci, jsou zahraniční, protože v našich zemích se téměř nepěstují odrůdy vhodné k tomuto použití anebo je k nim velmi málo informací. Cílem tedy bylo vybrat několik zahraničních odrůd, kterým by vyhovovaly podmínky ČR. Bylo vybráno 5 nejvhodnějších odrůd jabloní a 3 odrůdy hrušní.

Abstract:

This bachelor's thesis deals with apple and pear varieties suitable for the production of cider and perry. The production process is also briefly described. From the history of the fruit trees themselves, through the correct treatment of orchards and some content components, to the description of the varieties themselves. All varieties described in this work are foreign, because there are almost no varieties suitable for this use in our countries, or there is very little information about them. The aim was to select several foreign varieties that would suit the conditions of the Czech Republic. The 5 most suitable apple varieties and 3 pear varieties were selected.
