The production of carbonated wine beverages

Abstract:

Diplomová práce se zabývá výrobou sycených vinných nápojů, což nabídlo příležitost objevovat možnosti zpracování hroznů prostřednictvím modifikované vinařské praxe. Cílem experimentu bylo vyvinout receptury k výrobě sycených vinných nápojů zhotovených ze surovin, které se v běžné vinařském průmyslu považují za odpad a vedlejší produkty. Výsledkem byly nápoje na bázi matolinového vína, z výlisků hroznů odrůdy ‘Tramín červený’, dotvořené přídavkem aromatizujících aditiv. Ve finální fázi procesu výroby byly tyto nápoje syceny oxidem uhličitým, získaného z fermentace hroznového moštu. Zachycování a jeho opětovné využití nepřináší jen významný přínos pro přírodu a snížení uhlíkové stopy, ale taky to, že vnáší do nápoje zajímavé aromatické vlastnosti.

Abstract:

The thesis deals with the production of carbonated wine beverages, which offered the opportunity to explore the possibilities of grape processing through modified winemaking practices. The aim of the experiment was to develop recipes to produce carbonated wine beverages made from raw materials that are considered waste and by- products in the conventional wine industry. The result was matoline-based beverages, made from the pomace of the 'Gewürztraminer' grape variety, enhanced by the addition of flavouring additives. At the final stage of the production process, these drinks were carbonated with carbon dioxide obtained from the fermentation of the grape must. Capturing and reusing this carbon dioxide not only brings significant benefits for nature and a reduction in the carbon footprint, but also brings interesting aromatic properties to the drink.
