Abstract:

RONEŠOVÁ, Kateřina. Management italské gastronomie s implementací na české prostředí. [Diplomová práce] Vysoká škola hotelová. Praha: 2019. 129 stran. Diplomová práce na téma Management italské gastronomie s implementací na české prostředí je zaměřena zejména na vliv italské gastronomie a managementu v českém prostředí. Teoretická část práce se rozděluje na dvě větší části. V první části se práce zaměřuje na pojem gastronomie jako celek, dále na vývoj a charakteristiku italské gastronomie, na regionální italskou gastronomii, na známé italské produkty a poté je zde více do hloubky rozebrán kraj Marche a osoba, díky které tato práce mohla vzniknout – Riccardo Lucque. V druhé části, ještě teoretické, je v práci rozebrán management, jeho charakteristika, práce s lidmi a komunikace se zákazníky. Analytická část práce se zabývá především společností La Collezione a její sítí kulinářských podniků v České republice. Analytická část je rozdělena na dvě části, kde každá část má jednu hypotézu. První část je věnována charakteristice společnosti La Collezione především z pohledu jejích restaurací a bister. S ohledem na teoretickou část týkající se managementu italské gastronomie obsahuje tato část i řízené rozhovory s šéfkuchaři této společnosti. Druhá část je zaměřena na pohled zvenčí, tedy na lidi (potenciální zákazníky), kteří se zajímají a mají určitý přehled o italské gastronomii na české scéně. Poslední částí této práce je část návrhová. Tato část obsahuje návrhy, které by mohly vést k většímu oslovení českých příznivců kvalitní kuchyně a celkově pomoci zvýšit zájem o podniky společnosti La Collezione a pravou italskou gastronomii v českém prostředí.

RONEŠOVÁ, Kateřina. Management of the Italian gastronomy with implementation to the Czech environment. Master’s dissertation. The Institute of Hospitality Management in Prague. Prague 2019, 129 pages. This diploma thesis called Management of the Italian gastronomy with implementation to the Czech environment is focused mainly on impact of Italian gastronomy and management in Czech environment. Theoretical part is divided in two big parts. In first, the thesis is focusing on the term gastronomy, then on the evolution and characteristics of the Italian gastronomy, on regional Italian gastronomy, on famous Italian products and after that is more deeply discussed the district Marche and the person of whom this thesis was able to start – Ricardo Lucque. In second part of the theoretical section, this thesis is focusing on term management, its characteristics, work with people and communication with the customers. Analytical part of this thesis is dealing with the company La Collezione and its culinary company chain in Czech Republic. Analytical part is divided into two parts and both of them have their own hypothesis. First part is focusing on the company La Collezione from the view of their restaurants and bistros. Responding to the heretical part, which was focusing on management of Italian gastronomy, this analytical part of this thesis including also interviews with chefs of this company. Second part is focused on the view from the outside, what means that is focusing on people (potential customers), which are interested and they also know something about the Italian gastronomy on Czech market. Last part of this master thesis includes proposals, which could lead to bigger accosting of Czech supporters of qualitative cuisine and overall help to rise the interest of La Collezione company and the real Italian gastronomy in Czech environment.
