Carbohydrates in the teaching of chemistry

Abstract:

Tato bakalářská práce se zaměřuje na problematiku sacharidů ve výuce chemie a biologie na základních a středních školách. Teoretická část je věnována popisu sacharidů, včetně jejich zdrojů, chemického složení, fyzikálních a chemických vlastností, metabolismu, výroby a praktického využití. V rámci praktické části bakalářské práce byla provedena analýza učebnic chemie a biologie pro základní a střední školy, připraveny výukové karty a vypracována anotace 20 videí. V učebnicích chemie byl proveden výběr významných zástupců sacharidů. Dále bylo srovnáno zastoupení důležitých pojmů, obrázků a pokusů na téma sacharidy. Analýzou učebnic biologie bylo téma sacharidy doplněno z hlediska výskytu sacharidů, metabolismu, nemocí. Bylo vypracováno celkem 20 karet, z toho 10 výukových karet pro významné zástupce sacharidů, jejich klasifikaci a metabolismus a 10 karet s návody na pokusy, které se vyskytují v učebnicích chemie pro ZŠ a SŠ. Výukové karty a schémata metabolických procesů byly sestaveny pomocí webové aplikace Canva Pro a ChemSketch.

Abstract:

This bachelor thesis focuses on the issue of carbohydrate in the teaching of chemistry and biology in primary and secondary schools. The theoretical part is focused on the description of carbohydrates, including their sources, chemical composition, physical and chemical properties, metabolism, production and practical use. The practical part of the bachelor thesis included the analysis of chemistry and biology textbooks for primary and secondary schools, the preparation of teaching cards and the annotation of 20 videos. A selection of important representatives of carbohydrates in chemistry textbooks was made. Furthermore, the representation of important concepts, pictures and experiments on carbohydrates was compared. By analyzing biology textbooks, the topic of carbohydrates was added in terms of carbohydrate occurrence, metabolism, diseases. A total of 20 cards were developed, including 10 instructional cards for important representatives of carbohydrates, their classification and metabolism and 10 cards with instructions for experiments found in chemistry textbooks for primary and secondary schools. The instructional cards and metabolic process diagrams were constructed using the web-based application Canva Pro and ChemSketch.
