Analysis of the content of selected elements in the wild strawberry (Fragaria vesca)

Abstract:

Tato diplomová práce se zabývala analýzou vybraných prvků v jahodníku obecném (Fragaria vesca), který pocházel z oblasti Jedové hory, kde se dříve těžila rumělka. Mezi prvky, které byly stanovovány v jahodníku obecném, patří rtuť, arsen, kadmium a olovo. Cílem této diplomové práce bylo zjistit, zda jsou odebrané vzorky jahodníku obecného, zejména listy a plody vhodné pro konzumaci člověkem i když pochází z kontaminované oblasti. V teoretické části jsou popsány mechanismy, kterými se tyto prvky dostávají do potravin, půdy a jakým způsobem ovlivňují lidské zdraví. V praktické části je tato práce zaměřená na analýzu kořenů, listů a plodů jahodníku obecného. Kromě rostlin byly v této práci také analyzovány i vzorky půd ze stejné oblasti. Nejvyšší naměřené koncentrace rtuti v půdě, ale i ostatních prvků, byly naměřeny u vzorků D20, B6, B10 a D6. Tyto vysoké koncentrace souvisely s místem odběru. Vysoké koncentrace v kořenech a listech odpovídaly ve většině případů stejným vzorkům. Naměřené koncentrace v plodech splňovaly legislativní limit.

Abstract:

This diploma thesis focused on the analysis of selected elements in wild strawberries (Fragaria vesca) originating from the Jedová hora area, where cinnabar was previously mined. Among the elements analyzed in wild strawberries were mercury, arsenic, cadmium, and lead. The aim of this thesis was to determine whether the samples of wild strawberries, especially leaves and fruits, are suitable for human consumption despite originating from a contaminated area. The theoretical part describes the mechanisms by which these elements enter food, soil, and how they affect human health. The practical part of this work focuses on the analysis of roots, leaves, and fruits of wild strawberries. In addition to plants, soil samples from the same area were also analyzed. The highest measured concentrations of mercury in the soil, as well as other elements, were found in samples D20, B6, B10, and D6. These high concentrations were associated with the sampling location. High concentrations in roots and leaves mostly corresponded to the same samples. The measured concentrations in the fruits met legislative limits.
