Cider production possibilities by secondary fermentation of fruit wines

Abstract:

Diplomová práce se zabývá tématem výroby cideru sekundární fermentací v lahvi. V literární části jsou popsány různé metody výroby ciderů – pét-nat, tradiční kvašení v lahvi, transferová metoda a metoda kvašení v tanku. Dále je popsán detailní postup výroby cideru od zpracování jablek až po finální sycení oxidem siřičitým. Práce zahrnuje také pasáž věnující se chemickému složení cideru, přehledu české legislativy upravující náležitosti ciderů, ale i přehled častých vad vyskytujících se v ciderech. V praktické části je popsána výroba primárního tichého cideru a následný experiment v podobě sekundární fermentace v lahvi s různými variantami tirážního likéru. Výsledný cider byl podroben fyzikálně-chemickému rozboru a senzorickému hodnocení.

Abstract:

This dissertation deals with the topic of cider production by secondary fermentation in a bottle. Theoretical part describes various methods of cider production – pét-nat, traditional fermentation in a bottle, the transfer method and the method of fermentation in the tank. Furthermore, a detailed process of cider production is described commencing with apple processing and ending with the final saturation using sulfur dioxide. This dissertation also includes one passage focused on the chemical composition of cider, an overview of Czech legislation which modifies requirements on ciders, but also a summary of common defects occurring in ciders. In experimental part of this dissertation, the production of primary silent cider and the subsequent experiment in the form of secondary fermentation in a bottle with different variants of the tirage liqueur is described. The resulting cider was subjected to a physicochemical analysis and sensory evaluation.
