Abstract:

Český restaurační řetězec z hlediska jeho aktuální konkurenceschopnosti v zahraničí. (Diplomová práce) Vysoká škola hotelová. Praha: 2013. Celkový počet je 96 stránek. Tato diplomová práce zahrnuje informace o Českých restauračních řetězcích z hlediska jejich aktuální konkurenceschopnosti v zahraničí. Cílem průzkumu je zjistit úroveň konkurenceschopnosti českých restaurací v Německu, Drážďanech, na základě dostupných a získaných informací. Teoretická část diplomové práce popisuje historický vývoj a důležité momenty ve vývoji poskytování stravovacích služeb. Věnovala jsem pozornost i výběru franchisingového konceptu a získání základních informací o franchisingu a také o nejvýznamnější instituci, která reprezentuje franchising v České republice, což je Česká asociace franchisingu (ČAF). Důležité informace o hygieně v gastronomii a legislativě. Základní informace o rozvoji gastronomie v České republice od počátku 20. století odráží měnící se potřeby společnosti, rozvoj restauračních služeb, formace restauračních řetězců a skupin restaurací. V praktické částí byla pozornost věnována vyhodnocení restauračních řetězců jak v České republice tak i v sousedních zemích. Výstup ukazuje jak si české restaurační řetezce stojí mimo vlastní zemi. Zhodnocení situace v daném oboru na trhu Drážďan, abych spočítala konkurenceschopnost jednoho z restauračních řetězců Ambiente. Součástí praktické části jsou SWOT analýza a analýza Porterova modelu. Závěr práce tvoří návrhová část, která na základě získaných údajů předkládá různá doporučení pro marketingové strategie, pro výběr cílové skupiny a pro navržení vhodných nástrojů a způsobů komunikace. Vývoj restaurace podnikání závisí na aktuálních potřebách návštěvníků, což se odráží v úrovni poskytovaných služeb. Šetření bylo prováděno vzhledem k sousedním zemím.

Abstract:

Czech restaurant chain in terms of its actual competitiveness abroad. (Master thesis) The Institute of Hospitality Management in Prague 8, Ltd. Prague: 2013. In total 96 pages. This master thesis includes information about the Czech restaurant in the view of its actual competitiveness overseas. The goal of the research is to find out the level of competitiveness of Czech restaurants in Dresden, Germany on the basis of available and received information. The theoretical part of the master thesis describes the historical development and important moments in the development of providing catering services. I devoted my attention even to the choice of a franchising concept and obtaining basic information about franchising and also the most significant institution, which represents franchising in the Czech Republic (Česká asociace franchisingu). The important information about the hygiene in gastronomy and legislative. The basic information about the gastronomy development in the Czech Republic in the 20th century reflect the changing needs of the society, development of restaurant services, formation of restaurant chain and group of restaurants. The attention was turned to evaluating the restaurant chains in the Czech Republic and overseas. The work shows how the Czech restaurants perform overseas. Evaluate the situation in the given industry in the Dresden market in order to find out the competitiveness of one of the restaurant chains Ambiente. SWOT analysis and Porter analysis are part of practical part. The final part is made up of the proposal part, which sets forth several proposals for the marketing strategies based on the obtained information. It also sets forth proposals for the choice of the target group, using the right tools and ways of communication. The development of the restaurant depends on the customer needs, which is then reflected in the level of provided services. The research was done in relation to the neighboring country.
