Influence of different inoculation methods of grape must on wine quality.

Abstract:

Práce se zabývá různými metodami kvašení révových moštů. Popisuje jed-notlivé metody zakvašení, kvasinky, alkoholovou fermentaci a terroir. Byl zpracovány dvouletý pokus, při kterém byly vyrobeny vzorky vín ze stejných odrůd. Rozdíl ve výrobě byla pouze metoda zakvašení moštu. Ostatní kro-ky při výrobě vína byly totožné, aby jediný rozdíl ve vyrobených vínech byla pouze metoda zakvašení. Získané výsledky jsou přehledně zpracovány a zhodnoceny včetně aroma-profilů a profilů vín.

Abstract:

My thesis deals with various methods of fermentation of grape must. Describes unique methods of inoculation, yeast, alcohol fermentation, and terroir. A two-year experiment was made with samples of wines made from the same varieties. The difference in production was only the inoculation of the must. The other steps in wine making were the same, so that the only difference in the produced wine was the method of inoculation. The results obtained are clearly elaborated and evaluated, including aroma-profiles and wine profiles.
