Using the Lean Six Sigma methodology to optimize internal processes

Abstract:

Cílem bakalářské práce je s využitím relevantních nástrojů manažer-ského přístupu Lean Six Sigma návrh automatizace rutinní práce ve výrobě za účelem minimalizace nákladů na výrobní faktor. Návrh op-timalizace je prováděný na pekárnu ABC, s.r.o. v Jihomoravském kraji. Pro zlepšení stávajících interních procesů byl použitý cyklus DMAIC. V rámci zpracování práce je dílčím cílem i pochopení filozofie Lean Six Sigma, zdůvodnění užití nástrojů v projektu a uvedení příkladů užití tohoto přístupu v praxi. Za dílčí cíle také lze označit analýzu odvětví, která objasnila zvyšující se náklady na hlavní činnost podniku, dále pak analýzu konkurence a úlohu státu v odvětví, aj. Pro společnost by-la provedena finanční analýza, která zhodnotila finanční zdraví podni-ku. Projekt Lean Six Sigma je sestavován na základě výsledků finanční analýzy a kritickým oblastem ve výrobním procesu. Zlepšovacím pro-cesem byla zmetkovost a výroba plněného pečiva. Z přístupu Lean Six Sigma byly autorem této práce vybrány nejvhodnější nástroje, které pomohly definovat problém, nalézt kořenové příčiny tohoto problému a najít vhodné řešení pro eliminaci daného problému. Závěrem práce je zhodnocení navrhované investice a celkový přehled, dokazující vě-rohodnost návrhu.

Abstract:

The aim of bachelor’s thesis, using the relevant tools of the Lean Six Sigma managerial approach, is the proposal to automate routine work in production to minimise the cost of the production factor. The opti-misation proposal is being carried out at the ABC bakery, s.r.o. in the South East. The DMAIC cycle used was used to improve existing inter-nal processes. As part of processing the work, understanding the phi-losophy of Lean Six Sigma, justifying the use of tools in the project and giving examples of the use of this approach in practise are part of the objective. Sector analysis can also be identified as partial objectives, clarifying the increasing costs of the enterprise’s core business, com-petition analysis and the state’s role in the sector, etc. A financial analysis was carried out for the company to assess the financial health of the business. The Lean Six Sigma project is assembled based on the outcome of a financial analysis and critical areas in the production process. The improvement process was the creaminess and manufac-ture of stuffed pastries. From the Lean Six Sigma approach, the best tools were selected by the author of this work to help define the prob-lem, find the root causes of this problem and find a suitable solution to eliminate the problem. The conclusion of the work is an assessment of the proposed investment and an overall overview, proving the credi-bility of the proposal.
