Application of Lean Management within accommodation services

Abstract:

Diplomová práce s názvem Uplatnění Lean Managementu v ubytovacím zařízení je zaměřena na praktické využití Lean filozofie na konkrétních hotelových procesech v Pensionu Vráž. Práce je strukturovaná do dvou částí. První metodologická část je zaměřena na seznámení s Lean Managementem skrze jeho historii, dále je popsána filozofie Toyota Production System a na závěr teoretická struktura projektu a metodické nástroje. Praktická část je strukturována pomocí projektového přístupu DMAIC do pěti částí. Je zde představen analyzovaný podnik, jehož proces ubytování je dále mapován. Na základě definování současné situace, měření a analýzy jsou určeny procesní nedostatky, kterým je věnována pozornost v závěru práce. Zde jsou navrženy opatření za účelem zlepšení poskytovaných služeb a sloužící jako první krok k zavedení filozofie neustálého zlepšování v podniku.

Abstract:

Master thesis Application of Lean Management within accommodation services is focused on the practical use of Lean philosophy on specific processes in the hotel Pension Vráž. The work is structured in two parts. The first methodological part is focused on the introduction of Lean Management through its history, it describes the philosophy of Toyota Production System and finally the theoretical structure of the project and methodological tools. The practical part is structured into five parts using DMAIC project approach. Analyzed company whose process of accommodation is later mapped is presented here. Based on the definition of the current situation, the measurement and analysis are determined procedural shortcomings intended for further exploration. At the end of this work there are steps designed to improve the provided services which also serve as a first step towards a philosophy of continuous improvement in the company.
