Methods of applying hydrogels to the surface of fruit and vegetables

Abstract:

Cílem této diplomové práce bylo vyvinutí metodiky nanášení biopolymerních směsí přímo na povrch vybraných čerstvých potravin, ovoce a zeleniny, a vyhodnocení perspektivy biopolymerní směsi na bázi vaječného bílku. V teoretické části této práce je nastíněna problematika obalového průmyslu a příčiny kažení potravin. Dále jsou popsány metody aplikace biopolymerních povlaků a filmů uplatnitelné v laboratorním měřítku a shrnuty přírodní polymery. V experimentální části práce byla na základě vyhodnocení nanášení biopolymerních směsí na vzorky jahod a okurek vybrána série obsahující proteinovou složku (30 %), 33 % glycerolu (vztaženo vůči pevné složce) a 7 % extraktu z šafránu, pro kterou byly vzorky ošetřených plodin analyzovány spektroskopií v blízké infračervené oblasti.

Abstract:

The aim of this thesis was to develop a methodology for applying biopolymer mixtures directly onto the surface of selected fresh foods, fruits and vegetables, and to evaluate the prospects of biopolymer mixtures based on egg white. The theoretical part of this thesis outlines the issue of the packaging industry and the causes of food spoilage. Furthermore, methods for the application of biopolymeric coatings and films on a laboratory scale are described and natural polymers are summarized. In the experimental part of the thesis, the most suitable coating mixture was selected regarding the evaluation of strawberry and cucumber samples’ coating made of different biopolymeric mixtures. For this coating mixture, the samples of fruit and vegetable were subjected to analysis by near infrared spectroscopy.
