Tepelně opracované masné výrobky jsou nejrozmanitější skupinou masných výrob-ků. U spotřebitelů patří mezi nejvíce oblíbené produkty. V úvodu je popsáno zpracování masa jako základní surovina pro jejich výrobu. Následují technologické operace zpraco-vání masa pro výrobky.
