Growth and carcass value of sumavska sheep lambs and its crossbreeds

Abstract:

Disertační práce byla zaměřena na zhodnocení růstu a základních ukazatelů jatečné hodnoty jehňat šumavské ovce a jejich kříženců s plemeny suffolk a texel. Do studie bylo zařazeno celkem 99 jehňat následujících genotypů: SF x Š, Š, SF x (T x Š) a Š x (T x Š). Sledování bylo realizováno na rodinné ekologické farmě ve městě Proseč. V rámci hodnocení růstu jehňat byla sledována živá hmotnost při narození, v 70, 100 dnech a 130 dnech věku. V rámci hodnocení růstu byl zjišťován (za celý sledovaný soubor) vliv genotypu, pohlaví, četnosti vrhu, interakce genotypu x pohlaví, interakce genotypu x četnosti vrhu a interakce pohlaví x četnosti vrhu na ukazatele růstové schopnosti, respektive na živé hmotnosti a denní přírůstky jehňat. Z výsledků kontrolní porážky vyplývá, že faktor genotypu měl průkazný vliv na většinu sledovaných ukazatelů jatečné hodnoty. Celkem bylo poraženo 46 jehňat. Vysoce průkazný vliv genotypu byl zaznamenán na věk při porážce, denní přírůstek v intervalu 0 – porážka, hmotnost jatečně upraveného těla, výtěžnost, podíl ledvin, podíl kůže, hmotnost kýty a plece, zmasilost, hmotnost a podíl srdce, hmotnost sleziny, hmotnost levé kýty a hmotnost, respektive podíl svaloviny s tukem z partie levé kýty. Průkazný vliv byl zaznamenán na hmotnost kůže, protučnění, hmotnost jater, podíl sleziny, podíl kostí z partie levé kýty, obsah sušiny, obsah intramuskulárního tuku a na vaznost masa.

Abstract:

This dissertation was aimed at evaluation of growth and basic indicators of carcass value of sumavska sheep lambs and its crossbreeds with suffolk and texel. Altogether, there were 99 lambs included in the study of the following genotypes: SF x S, S, SF x (T x S) and S x (T x S). This research had taken place at a family eco farm in Proseč. In scope of the growth evaluation live weight at birth, in 70 days of age, 100 days of age and 130 days of age were observed. In scope of the growth evaluation (for full monitored file) effect of genotype, gender, litter size, genotype’s interaction vs. gender, genotype’s interaction vs. litter size and gender’s interaction vs. litter size on growth ability indicators was observed, more precisely on live weight and daily gains. The results of slaughter show that the genotype had significant effect on most of the monitored carcass value indicators. In all, 46 lambs were slaughtered. The genotype had a highly significant effect on age at slaughter, daily gain on 0 – slaughter, carcass weight, carcass yield, kidney ratio, skin ratio, weight of leg and shoulder, conformation score, weight and heart ratio, spleen weight, left leg weight and weigh or more precisely muscle with fat from ratio from left leg. The genotype had a significant effect on skin weight, fattiness, liver weight, spleen ratio, bone ratio from left leg, dry matter content, content of intramuscular fat and water holding capacity.
