Identification of shortcomings and design of a supply chain in a newly established food company

Abstract:

Tato diplomová práce analyzuje a řeší problémy nedávno vzniklé výrobní firmy, která působí v potravinářském průmyslu. Hlavní použitou metodou je metoda logistického auditu, kdy je logistický řetězec a procesy podrobeny zkoumání. Je slovně popsán aktuální stav a jsou diagnostikovány problémy. Každá podkapitola auditu, tedy i této práce, má poté navrhující část, kde jsou objevené problémy řešeny a navrhnuty opatření, které by měly dané problémy vyřešit, či alespoň omezit. Teoretická část práce se věnuje nejprve metodologii, tedy logistickému auditu a controllingu. Poté celému řetězci, což je potřebná část pro následné pochopení procesů, které se v praktické části analyzují. Jedná se především o procesy nákupu, příjmu, skladování, plánování, výroby, prodejů a distribuce. Taktéž práce představuje specifika logistiky potravin včetně legislativních potřeb. Provedeným logistickým auditem bylo zjištěno, že má vybraná společnost velké nedostatky v oblasti informačních toků, především v informačním systému, který neexistuje. Audit také objevil, že jsou zde procesy funkční, ale s nutností jejich optimalizace. Především v oblasti evidence, rozložení skladu a využití prostoru. Taktéž audit navrhuje některé investice, které by měly pomoci chodu skladu a i výroby. Pokud by se realizovali popsané kroky, dojde k navýšení skladového prostoru až o 50 % v počtu palet, zvýší se bezpečnost pracovníků i zboží a zjednoduší a zpřesní se evidence. Na základě lepší evidence pak následně lze plánovat a realizovat další kroky vedoucí k úspěšnější společnosti.

Abstract:

This thesis analyses and solves the problems of a recently established manufacturing company that operates in the food industry. The main method used in thesis, is the logistics audit method, where the supply chain and processes are subjects of research. The current status is verbally described and problems are diagnosed. Each sub-chapter of the audit has a design part, where the discovered problems are solved and measures are proposed that should solve the given problems, or at least limit them. The theoretical part of the work is first devoted to methodology, i.e. logistic audit and controlling. Then to the entire supply chain, which is a necessary part for the understanding of the processes that are analysed in the practical part. These are mainly the processes of purchase, receipt, storage, planning, production, sales, and distribution. The thesis also presents the specifics of food logistics, including legislative requirements. The logistics audit found out that the selected company has major deficiencies in the area of information flows, especially in the information system, which actually does not exist. The audit also discovered that the processes here are functional, but with the need to optimize. Primarily in the area of inventory records, warehouse layout and use of space. The audit also suggests some investments that should help the operation of the warehouse and production. If the described steps were to be implemented, the warehouse space would increase by up to 50% in the number of pallets, the safety of workers and goods would increase, and inventory records would be simplified and more accurate. On the basis of better records, it is then possible to plan and implement further steps leading to a more successful company.
