Tato bakalářská práce se zabývá problematikou vlivu teplotních profilů na analytické a senzorické parametry bílých vín. Literární část popisuje alkoholovou fermentaci a kvasinky. Poté se věnuje řízené fermentaci, současným regulačním systémům, chemickému složení vína a možnému vlivu teploty na jednotlivé látky a jejich projevy.
