Study of medium-chain saturated fatty acids in the technology of wines with residual sugar

Abstract:

Diplomová práce pojednává o problematice inhibice alkoholové fermentace pomocí aplikace středně dlouhých nasycených mastných kyselin (MCFA). Literární rešerše se zabývá problematikou středně dlouhých nasycených mastných kyselin, alkoholovou fermentací a metabolismem karbonylových sloučenin. Jako design experimentu byly 3 metody inhibice alkoholového kvašení a jejich vliv na tvorbu karbonylových sloučenin a vaznosti SO2 v horizontu třech měsíců. V rámci výsledků měla nejnižší hodnoty celkového oxidu siřičitého a karbonylových sloučenin varianta MCFA. Senzorický profil se hodnotil pomocí stobodové hodnotící tabulky. Jednotlivé varianty při hodnocení neměly výrazné rozdíly, takže středně dlouhé nasycené mastné kyseliny negativně neovlivní kvalitu vína. Vína se také hodnotila speciální tabulkou upravenou dle potřeb O.I.V., kde se prokázalo, že všechny varianty jsou velmi podobné, ovocné a expresivní.

Abstract:

The diploma thesis deals with the issue of inhibiting alcoholic fermentation using the application of medium-chain saturated fatty acids (MCFA). In the literature research, he deals with medium-chain saturated fatty acids, the metabolism of carbonyl compounds. The design of the experiment was 3 methods of inhibiting alcoholic fermentation and their effect on the formation of carbonyl compounds and SO2 concentration over a period of three months. Within the results, the MCFA variant had the lowest values of total sulfur dioxide and carbonyl compounds. The sensory profile was evaluated using a hundred-point evaluation table. The individual variants did not have significant differences during the evaluation, so medium-chain saturated fatty acids will not negatively affect the quality of the wine. Wines were also evaluated using a special table adapted to the needs of the O.I.V. where all variants proved to be very similar, fruity and expressive.
