Antioxidant properties of \kur{Cordyceps} sinensis during \kur{in vitro} digestion proces

Abstract:

Tato bakalářská práce se věnuje charakteristice houby Cordyceps sinensis, antioxidační aktivitě a metodám, kterými ji lze stanovit, v neposlední řadě také všeobecnému popisu gastrointestinálního traktu a modelům trávení in vitro. V praxi byl proveden simulovaný proces trávení in vitro se vzorkem obsahující Cordyceps sinensis. Následně byla pomocí třech spektrálních metod stanovena antioxidační aktivita vzorku. Dané výsledky byly statisticky porovnány.

Abstract:

This bachelor thesis deals with the characteristics of the fungus Cordyceps sinensis, antioxidant activity and methods by which it can be determined and, last but not least, the general description of the gastrointestinal tract and in vitro digestion models. In practice, a simulated process of digestion in vitro was performed with a sample containing Cordyceps sinensis. Subsequently, the antioxidant activity of the sample was determined using three spectral methods. The results were statistically compared.
