Human health affected by the consumption of acrylamide in food

Abstract:

Bakalářská práce popisuje účinky akrylamidu na lidský organismus. Akrylamid patří mezi látky karcinogenní pro člověka, velmi nebezpečné jsou jeho neurotoxické účinky. Práce se zabývá také vznikem a eliminací akrylamidu v rizikových potravinách. Mezi tyto potraviny patří především hranolky, brambůrky a káva. Součástí práce je dotazníkové šetření týkající se konzumace potravin s potencionálním obsahem akrylamidu.

Abstract:

Bachelor's thesis describes the effects of acrylamide on human health. Acrylamide belongs among the substances which are carcinogenic to humans and exhibits dangerous neurotoxic effects. The pathways of formation of akrylamide in fous and the risk of its elimination were discussed in this work. French fries, potato chips and coffee were foods being the most exposed food material. The consumption of food with a potencial content of acrylamide has been examined in a questionnaire survey.
