Possibilities of confectionery production using brewing raw materials

Abstract:

Tato diplomová práce se zabývá výrobou a senzorickou analýzou nečokoládových cukrovinek za využití pivovarských surovin. Literární přehled je zaměřen na rozdělení a technologie výroby jednotlivých druhů nečokoládových cukrovinek a surovin pro výrobu piva – především sladina, chmel a výrobky z něj, kvasinky i výroba piva, jako potencionální suroviny pro výrobu nečokoládových cukrovinek. V experimentální části je popsána výroba nečokoládových cukrovinek typu kandyt a želé za použití sladiny, kdy bylo vyrobeno celkem osm různých vzorků pomocí různých surovin a technologií výroby. Následně byla provedena senzorická analýza jednotlivých druhů cukrovinek, výsledky jsou na závěr statisticky vyhodnoceny a vzájemně porovnány. Mezi vzorky byly vyhodnoceny významné rozdíly. K pozitivnímu hodnocení přispěla nejvíce příjemná charakteristická chuť sladiny, k negativnímu naopak zvýšená lepivost.

Abstract:

This diploma thesis deals with the production and sensory analysis of non-chocolate confectionery using brewing raw materials. The literature review is focused on the division and production technology of individual types of non-chocolate confectionery and raw materials for beer production - especially wort, hops, and products from it, yeast and beer production, as potential raw materials for the production of non-chocolate confectionery. The experimental part describes the production of non-chocolate candies of the candy type and jelly using wort, where a total of eight different samples were produced using various raw materials and production technologies. Subsequently, sensory analysis of individual types of confectionery was performed, and the results are finally statistically evaluated and compared. Significant differences were evaluated between samples. The most pleasant characteristic taste of wort contributed to the positive evaluation, while the increased stickiness contributed to the negative evaluation.
