Natural colorants and their color fastness in food products

Abstract:

Tato diplomová práce se zabývá přírodními barvivy a jejich stálebarevností v potravinářských výrobcích. Cílem práce bylo vypracovat literární rešerši na základě odborné literatury a provést analýzu změn přírodních barviv v sirupech o různé refrakci. Bylo testováno 12 přírodních barviv od 3 různých dodavatelů po dobu 21 dní v sirupech o refrakci 0 °Brix, 8 °Brix, 32,5 °Brix a 65 °Brix a hodnotami pH v rozmezí 2,5 - 3. Změny byly průběžně vizuálně kontrolovány a dokumentovány. Následně byly výsledky statisticky zpracovány a srovnány s odbornou literaturou. Statisticky významný vliv na odbarvení vzorků měl odstín a barevná složka, kdy sirupy obarvené modrým barvivem získaným ze spiruliny se odbarvily nejrychleji v porovnání s barvivy, která měla žlutý a červený odstín. Obzvláště stabilní byla barviva obsahující antokyany.

Abstract:

This master’s thesis deals with natural colorants and their color fastness in food products. The aim of this thesis was to elaborate a literature review based on scientific literature and carry out an analysis of color changes in sirups with various refraction. 12 natural colorants from 3 different suppliers were tested in sirups with refraction 0 °Brix, 8 °Brix, 32,5 °Brix and 65 °Brix and pH values 2,5 - 3 for 21 days. The changes were visually controlled and documented. Afterwards the results were statistically analysed and compared with scientific literature. The color and coloring component of the colorants had statistically significant influence on color loss. Sirups colored by blue color from spirulina underwent the fastest color loss compared to yellow and red colorants. Especially stable were colorants based on anthocyanins.
