Abstract:

Práce poskytuje pohled na měření úrovně štíhlosti za pomocí etnografického výzkumu. Spojení těchto dvou specifických oborů, tedy koncepce Lean Managementu a využití etnografie, je stále velice ojedinělé. Diplomová práce přináší stále moc neprozkoumanou oblast zjištění úrovně štíhlosti a přístupu k filozofii Lean. Vypracování práce v potravinářském průmyslu, konkrétně v závodě na balení rýže a jiných potravin, je taktéž ojedinělé. Po vypracování práce bude za pomocí výzkumu roudnickému závodu odhaleno, jak si podnik vede v oblastech tvorby hodnoty, plýtvání a neustálého zlepšování. Zároveň se podnik dozví, kde má prostor pro zlepšení. Na konci práce je podniku navržen návrh na zlepšení a jednotlivá opatření ke zvýšení úrovně štíhlosti organizace, a to takovým způsobem, aby pro podnik a jeho zaměstnance byl dobře uchopitelný a jednoduchý na implementaci. Práci také přidává na atraktivnosti fakt, že závod nemá v oblasti zlepšování moc zkušeností a je tedy úplným nováčkem, což znamená velkou příležitost k neustálému zlepšování.

Abstract:

The Diploma thesis provide an insight into the measurement of the level of Leanness with the help of ethnographic research. The combination of these two specific fields, the concept of Lean Management and the use of ethnography, is still very unique. The diploma thesis brings a much unexplored area of finding out the level of leanness and approach the Lean philosophy. The elaboration of work in the food industry, specifically in the rice and other food packaging plat, is also very unique. After the elaboration of work, the research of the Roudnice plant will reveal and provide to the company how the plant is doing in the areas of value creation, waste and continuous improvement. At the same time the company learns where they have a room for an improvement. At the end of the diploma thesis, the company has a suggestions for a change and individual steps how to increase level of leanness of Roudnice plant, in such a way that is easy for the company, its employees and is easy to implement. To the attractiveness of the thesis also adds the fact that the plant does not have much experience in the field of improvement and is therefore a complete newcomer, which means a great opportunity for continuous improvement.
